Overnight cinnamon rolls, without the 5 am alarm
Yeast rolls are the reason some people get up before the kids on Christmas morning. The slow rise can happen in the fridge instead. Make the dough on the afternoon of the 24th, let it rise once at room temperature, then roll, fill and cut the rolls in the evening and set them in a buttered 9x13 pan.
Timing the second rise is what makes or breaks them. PJ Hamel tested overnight rolls for King Arthur Baking and landed on a simple rule: give the shaped rolls a three-quarter rise, then cover the pan and refrigerate. Rolls that go in completely unrisen barely move in a cold fridge; rolls that go in fully risen can collapse by morning. She also recommends a shorter rise, about halfway, for leaner dough or a glass or ceramic pan.
In the morning, take the pan out while the casseroles bake so the rolls lose their chill, keep them covered, and bake them once the casseroles come out. Frost them warm, not hot, or the icing slides off.
One savory casserole, one sweet bake
Both casseroles get better for a night in the fridge, because the bread or potatoes soak up the custard. For the French toast, use a loaf of challah or brioche cut into cubes the day before and left uncovered to dry, so the cubes absorb custard without turning to mush. For the savory side, frozen shredded hash browns do the job of bread, which makes the dish naturally bread-free; thaw them in the fridge and press out the water before mixing in eggs, milk, wilted spinach, scallions and sharp cheddar.
Two food safety points matter here. The USDA says egg casseroles and quiches are done when a thermometer in the center reads 160°F; the top can look set long before the middle is. And a casserole should be cooked completely in one session: the USDA advises against partly baking it on Christmas Eve to finish in the morning, since bacteria can grow between the two bakes even in the fridge. Assemble raw, keep cold, bake once.
Take both dishes out of the fridge about 30 minutes before baking. A glass baking dish that goes straight from cold to a hot oven can crack, and a chilled center adds 15 minutes to the baking time.

If dinner is on the same day, this schedule leaves the oven free from 11 am, which is when the scalloped potatoes and ham of our Christmas dinner menu and timeline start their afternoon at 1:00 pm. Keep brunch light enough that people are hungry again at 5.
- 7:00 am. Someone presses start on the coffee. Stockings and the first round of presents.
- 9:15 am. Both casseroles come out of the fridge to lose their chill.
- 9:30 am. Oven to 350°F.
