Turkey Taco Bowl Meal Prep

Ingredients

  • 1,25 lb ground turkey
  • 2 tbsp taco seasoning
  • 2 cups bell peppers
  • 1 cups yellow onion
  • 1 cups pinto beans
  • 1,5 cups long-grain rice
  • 0,5 cups shredded cheddar

Instructions

    Brown ground turkey in a hot skillet, breaking it up, 6 minutes.

    Stir in taco seasoning and 1/4 cup water; simmer 3 minutes until glossy.

    Sauté diced bell peppers and onion until soft, 5 minutes.

    Cook rice according to package.

    Layer rice, turkey, peppers and pinto beans into 4 containers.

    Refrigerate up to 4 days or freeze up to 2 months; reheat 2-3 minutes, stirring halfway.
