Lean spiced turkey over seasoned rice with peppers and beans for a fast, satisfying weeknight fix.
Ingredients
- 1,25 lb ground turkey
- 2 tbsp taco seasoning
- 2 cups bell peppers
- 1 cups yellow onion
- 1 cups pinto beans
- 1,5 cups long-grain rice
- 0,5 cups shredded cheddar
Instructions
- 1
Brown ground turkey in a hot skillet, breaking it up, 6 minutes.
- 2
Stir in taco seasoning and 1/4 cup water; simmer 3 minutes until glossy.
- 3
Sauté diced bell peppers and onion until soft, 5 minutes.
- 4
Cook rice according to package.
- 5
Layer rice, turkey, peppers and pinto beans into 4 containers.
- 6
Refrigerate up to 4 days or freeze up to 2 months; reheat 2-3 minutes, stirring halfway.
Chef's tip
Undercook the peppers slightly since they soften more on reheating, keeping a pleasant bite all week.
Suggested pairing
A crisp lime margarita or sparkling water with lime rounds it out.
