Beef Taco Casserole
All the fiesta flavor of taco night layered into a bubbling, cheese-crowned bake the whole family devours.
Ingredients
- 1,5 lb ground beef
- 2 tbsp taco seasoning
- 1 cups black beans, drained
- 1 cups corn kernels
- 1 cups chunky salsa
- 4 cups tortilla chips
- 2 cups shredded Mexican cheese blend
- 0,25 cups fresh cilantro, chopped
Instructions

Preheat the oven to 375°F and grease a 9x13 dish.

Brown the ground beef, breaking it up, then drain excess fat.

Stir in taco seasoning, black beans, corn, and salsa; simmer 5 minutes.

Layer crushed tortilla chips in the dish, then the beef mixture.

Top with shredded cheese and a final scatter of chips.

Bake 25 minutes until the cheese is molten and bubbling. Finish with fresh cilantro.
Chef's tip
Add the top layer of chips only in the last 10 minutes so they stay crunchy instead of going soggy.
Suggested pairing
A zesty Margarita or a hoppy pale ale rounds out the bold spices.
