Tex-Mex
Instant Pot Smoky Beef Chili
A rich, smoky chili loaded with tender ground beef, beans and a deep chili-spice backbone that tastes like it simmered all day.
Ingredients
- 1,5 lb ground beef
- 1 cup yellow onion, diced
- 3 tbsp garlic cloves, minced
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 800 g crushed tomatoes
- 1 cup beef broth
- 2 cup kidney beans, drained
- 2 tbsp tomato paste
Instructions
- 1
Using Sauté mode, brown 1.5 lb ground beef with the diced onion until no pink remains, breaking it up as it cooks.
- 2
Stir in garlic, chili powder, cumin and smoked paprika; toast 1 minute until fragrant.
- 3
Add crushed tomatoes, beef broth, kidney beans and tomato paste; scrape the bottom to deglaze.
- 4
Seal the lid and pressure-cook on High for 15 minutes.
- 5
Let pressure release naturally for 10 minutes, then quick-release the rest.
- 6
Stir, adjust seasoning and simmer on Sauté 5 minutes to thicken.
Chef's tip
Toast the dry spices in the fat for a full minute before adding liquid — blooming them unlocks a deeper, rounder chili flavor.
Suggested pairing
Serve with a cold amber lager and a scoop of sour cream over cornbread.
