One-Pot Taco Pasta
All the bold flavors of taco night simmered into cheesy, saucy pasta in a single pot : kids and adults devour it.
Ingredients
- 1 lb ground beef
- 2,5 cups macaroni pasta
- 14 oz diced tomatoes
- 2,5 cups beef broth
- 2 tbsp taco seasoning
- 1,5 cups shredded cheddar
- 1 cups yellow onion
- 1 tbsp garlic
- 2 tbsp fresh cilantro
Instructions

Brown 1 lb ground beef with onion in a large pot until no pink remains, 6 minutes; drain fat.

Stir in garlic and taco seasoning, cooking 1 minute until fragrant.

Add diced tomatoes, beef broth and pasta, stirring to submerge.

Bring to a boil, then cover and simmer 12 minutes until pasta is tender, stirring occasionally.

Remove from heat and stir in cheddar until melted and creamy.

Top with cilantro and serve straight from the pot.
Chef's tip
Take the pot off the heat before adding the cheese so it melts into a silky sauce instead of turning grainy or stringy.

A zesty Mexican lager with a squeeze of lime is a natural match.
