King Ranch Chicken Casserole
Layers of tortilla, tender chicken and a spicy Tex-Mex cream sauce baked into cheesy Texas legend.
Ingredients
- 4 cups cooked shredded chicken
- 10 g corn tortillas
- 1 cups cream of chicken soup
- 1 cups sour cream
- 1 cups diced tomatoes with green chiles
- 1 cups yellow onion, diced
- 1 cups bell pepper, diced
- 2 cups shredded Monterey Jack
- 1 tbsp chili powder
- 1 tsp ground cumin

Preheat the oven to 350°F and butter a 9x13 dish.

Sauté onion and bell pepper until soft, then stir in diced tomatoes with green chiles.

Whisk in the cream of chicken soup and sour cream until silky, then add chili powder and cumin.

Fold in the shredded chicken.

Layer torn tortillas, chicken mixture, and cheese twice in the dish.
