Slow Cooker Pot Roast with Onion Gravy

A classic Sunday pot roast, meltingly tender and blanketed in a deeply savory caramelized onion gravy.

Ingredients

  • 3 lb beef chuck roast
  • 3 cup yellow onions, sliced
  • 2 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 3 tbsp garlic cloves, minced
  • 2 tbsp cornstarch

Instructions

    Season the 3 lb beef chuck roast well and sear on all sides in a hot skillet until deeply browned.

    Place the sliced onions in the slow cooker and set the roast on top.

    Whisk the beef broth with the Worcestershire sauce and pour over the meat.

    Add the thyme and garlic, then cook on LOW for 8 hours until fork-tender.

    Remove the roast to rest; whisk the cornstarch slurry into the pot juices and cook on HIGH 10 minutes to thicken into gravy.

    Slice the roast and smother in the onion gravy.
