Instant Pot Sunday Pot Roast

Ingredients

  • 3 lb beef chuck roast
  • 2 tbsp vegetable oil
  • 1 cup yellow onion, sliced
  • 2 tbsp garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp fresh rosemary
  • 2 cup carrots, chunked
  • 3 cup baby potatoes

Instructions

    Pat a 3 lb chuck roast dry, season generously, and sear all sides on Sauté in oil until deeply browned.

    Remove the roast; sauté onion and garlic, then stir in tomato paste for 1 minute.

    Deglaze with beef broth and Worcestershire, scraping the bottom, then return the roast with rosemary.

    Seal the lid and pressure-cook on High for 60 minutes.

    Let pressure release naturally for 15 minutes, then quick-release the rest.

    Add carrots and potatoes, reseal and cook on High 8 minutes; quick-release and rest before slicing.
