100 min6 servingsIntermediateAmerican

Ingredients

  • 2 lb beef chuck, cubed
  • 2 tbsp olive oil
  • 1 cup yellow onion, chopped
  • 2 tbsp garlic cloves, minced
  • 2 tbsp tomato paste
  • 3 cup beef broth
  • 2 cup carrots, chunked
  • 3 cup potatoes, cubed
  • 1 tbsp fresh thyme
  • 2 tbsp cornstarch

Instructions

  1. 1

Season 2 lb beef chuck with salt and pepper, then brown in batches on Sauté in olive oil; set aside.

  2. 2

Sauté onion and garlic 2 minutes, then stir in tomato paste and cook 1 minute.

  3. 3

Deglaze with beef broth, scraping up the browned bits, then return the beef with carrots, potatoes and thyme.

  4. 4

Seal the lid and pressure-cook on High for 35 minutes.

  5. 5

Let pressure release naturally for 12 minutes, then quick-release the rest.

  6. 6

Whisk the cornstarch slurry into the simmering stew on Sauté until thickened.

Chef's tip

Brown the beef in real batches — crowding steams the meat, and the fond left behind is where the stew's depth comes from.

Suggested pairing

A robust glass of Cabernet Sauvignon stands up beautifully to the rich gravy.
