Instant Pot Hearty Beef Stew
Fork-tender chunks of beef, potatoes and carrots in a glossy, herb-infused gravy that comforts in every bite.
Ingredients
- 2 lb beef chuck, cubed
- 2 tbsp olive oil
- 1 cup yellow onion, chopped
- 2 tbsp garlic cloves, minced
- 2 tbsp tomato paste
- 3 cup beef broth
- 2 cup carrots, chunked
- 3 cup potatoes, cubed
- 1 tbsp fresh thyme
- 2 tbsp cornstarch
Instructions

Season 2 lb beef chuck with salt and pepper, then brown in batches on Sauté in olive oil; set aside.

Sauté onion and garlic 2 minutes, then stir in tomato paste and cook 1 minute.

Deglaze with beef broth, scraping up the browned bits, then return the beef with carrots, potatoes and thyme.

Seal the lid and pressure-cook on High for 35 minutes.

Let pressure release naturally for 12 minutes, then quick-release the rest.

Whisk the cornstarch slurry into the simmering stew on Sauté until thickened.
