Egg Muffin Cups Meal-Prep
Fluffy baked egg cups loaded with spinach, cheese and peppers for protein-packed grab-and-go mornings.
Ingredients

- 0,25 cups milk
- 1 cups bell pepper
- 0,5 cups yellow onion
- 2 cups baby spinach
- 0,75 cups shredded cheddar
Instructions

Preheat oven to 375F and grease a 12-cup muffin tin.

Whisk eggs with milk, salt and pepper until frothy.

Sauté diced peppers and onion 3 minutes, then stir in chopped spinach until wilted.

Distribute veg among the cups and pour egg over each, then sprinkle cheese.

Bake 20 minutes until set and springy.

Cool, then refrigerate 4 days or freeze 2 months; reheat 45 seconds from chilled.

Don't overfill the cups; leave a quarter-inch gap so the eggs puff without spilling and stay tender when reheated.
