Classic Smash Burgers with Special Sauce
Craggy-edged beef patties smashed thin, blanketed in melty cheese and a tangy secret sauce on a toasted bun.
Ingredients
- 1,25 lb ground beef 80/20
- 4 tbsp American cheese slices
- 4 tbsp brioche burger buns
- 0,25 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp dill pickle relish
- 1 tsp yellow mustard
- 8 tbsp dill pickle slices
- 0,5 cup white onion
Instructions

Mix mayonnaise, ketchup, pickle relish, mustard and a pinch of paprika for the special sauce; chill.

Divide beef into 4 loose balls, do not season yet. Heat a cast-iron skillet until screaming hot.

Place a ball on the skillet and smash flat with a spatula for 10 seconds. Season with salt and pepper.

Sear 2 minutes until deeply browned, flip, top with cheese and cook 1 minute more.

Toast buns in the beef fat until golden.

Build with sauce, patty, pickles and onion. Serve immediately while juicy.
Chef's tip
Use a stiff metal spatula and press only once, hard, within the first 30 seconds. Smashing later squeezes out juices and prevents that lacy crust.
