Baked feta pasta (serves 4, 40 minutes, easy). The dish started as a Finnish blog recipe before TikTok carried it everywhere in early 2021. Tip 2 pints (about 600 g) cherry tomatoes, 1 sliced shallot and 3 whole garlic cloves into a baking dish with 1/3 cup (80 ml) olive oil and a good pinch of salt. Nestle a 7 oz (200 g) slab of feta at the center, drizzle it with oil and scatter 1/2 teaspoon chili flakes. Bake at 400°F (200°C) for 35 minutes, until the tomatoes burst.
