Slow Cooker Chicken Cacciatore
Rustic Italian hunter's stew of chicken braised with peppers, tomatoes, mushrooms and herbs in a fragrant sauce.
Ingredients
- 2,5 lb bone-in chicken thighs
- 2 cup bell peppers, sliced
- 2 cup cremini mushrooms, sliced
- 1 cup yellow onion, sliced
- 3 tbsp garlic cloves, minced
- 3 cup crushed tomatoes
- 1 tbsp dried oregano
- 1 tsp dried basil
- 0,5 cup black olives, pitted
- 3 tbsp fresh basil, torn
Instructions

Season the chicken thighs and sear in a hot skillet until golden, then place in the slow cooker.

Add the sliced bell peppers, mushrooms, onion and garlic around the chicken.

Pour over the crushed tomatoes and stir in the oregano and dried basil.

Cook on LOW for 6 hours until the chicken is tender and the sauce is rich.

Stir in the black olives during the final 20 minutes.

Garnish with fresh basil and serve over pasta or polenta.

Searing the chicken skin first builds fond and richness; if you like a thicker sauce, uncover for the last 30 minutes on HIGH.
