Slow Cooker Chili Con Carne
A robust, slow-simmered chili loaded with beef, beans and warming spices that only gets better as it cooks.
Ingredients
- 2 lb ground beef
- 1 cup yellow onion, diced
- 3 tbsp garlic cloves, minced
- 3 tbsp chili powder
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 3 cup crushed tomatoes
- 2 cup kidney beans, drained
- 1 cup beef broth
Instructions

Brown 2 lb ground beef in a skillet, breaking it up, then drain and add to the slow cooker.

Stir in the diced onion, garlic, chili powder, cumin and smoked paprika.

Add the crushed tomatoes, kidney beans and beef broth, mixing well.

Cook on LOW for 7 hours, letting the flavors meld and thicken.

Taste and adjust the seasoning during the last 30 minutes.

Serve topped with grated cheese and a dollop of sour cream.
Chef's tip
Stir in a square of dark chocolate or a spoon of cocoa in the final hour for a rounder, richer depth of flavor.

Serve with cornbread and an ice-cold Mexican lager.
