Shrimp and Snap Pea Stir-Fry
Plump shrimp and snappy sugar peas flash-fried in a light garlic-ginger sauce : elegant, vibrant and ready in minutes.
Ingredients
- 1 lb large shrimp
- 4 cups sugar snap peas
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tsp cornstarch
- 1 tbsp sesame oil
- 1 tbsp garlic
- 1 tbsp fresh ginger
- 2 tbsp vegetable oil
- 3 tbsp green onion
Instructions

Whisk soy sauce, oyster sauce, cornstarch and sesame oil with 3 tbsp water for the sauce.

Pat 1 lb shrimp dry and sear in hot vegetable oil until pink and curled, 2 minutes per side; remove.

Add garlic and ginger to the pan and stir 30 seconds until fragrant.

Toss in snap peas and stir-fry 2 minutes until bright and crisp-tender.

Return shrimp, pour in the sauce and toss over high heat until glossy, 1 minute.

Finish with green onion and serve immediately.

Dry the shrimp thoroughly before searing : surface moisture steams the pan and prevents that quick, appetizing golden edge.
