Chocolate Peanut Butter Oat Energy Balls

Ingredients

  • 1,5 cup rolled oats
  • 0,5 cup natural peanut butter
  • 0,33 cup honey
  • 3 tbsp ground flaxseed
  • 0,33 cup mini dark chocolate chips
  • 0,25 cup roasted almonds, chopped
  • 1 tsp vanilla extract
  • 0,25 tsp fine sea salt

Instructions

    In a small saucepan over low heat, warm the honey and peanut butter together, stirring constantly until glossy and pourable, about 2 minutes. Remove from heat.

    Stir the vanilla extract and a pinch of fine sea salt into the warm peanut butter mixture to bloom the flavours.

    In a large mixing bowl, combine the rolled oats, ground flaxseed, mini dark chocolate chips, and chopped roasted almonds.

    Pour the warm peanut butter mixture over the dry ingredients. Using a sturdy spatula, fold everything together until the oats are fully coated and the dough holds together when pressed.

    If the mixture feels too dry, add 1 tsp of water; if too wet, add 1 tbsp more oats. It should feel like soft cookie dough.

    Cover the bowl and refrigerate for 15 minutes-this firms the fats and makes rolling much easier.

    Using a tablespoon measure, scoop portions and roll between your palms into smooth 1-inch (2.5 cm) balls. You should get about 20 balls.

    Arrange the balls on a parchment-lined tray and refrigerate for at least 30 minutes to fully set.

    Store in an airtight container in the fridge for up to 1 week, or freeze for up to 2 months.
