Spiced Apple Crumble with Oat and Pecan Topping
Tart-sweet apples bubble under a buttery, cinnamon-scented oat crumble with crunchy pecans : the ultimate cold-weather comfort.
Ingredients
- 6 unit mixed baking apples (Honeycrisp and Granny Smith)
- 2 tbsp fresh lemon juice
- 0,33 cup light brown sugar (for filling)
- 2 tbsp cornstarch
- 1,5 tsp ground cinnamon
- 0,25 tsp freshly grated nutmeg
- 0,75 cup all-purpose flour
- 0,75 cup rolled oats
- 0,5 cup light brown sugar (for topping)
- 0,5 cup melted unsalted butter (115 g)
- 0,5 cup pecans, roughly chopped
- 0,5 tsp fine sea salt

Preheat oven to 375°F (190°C) and butter a 9-inch (23 cm) baking dish.

Peel, core and slice apples into ½-inch (1 cm) wedges. Toss in a bowl with lemon juice to prevent browning.

Add brown sugar, cornstarch, cinnamon, nutmeg and a pinch of salt to the apples and toss until every slice is glossy and coated.

Tip the apples into the prepared dish and press down gently to level.

In a separate bowl, whisk flour, oats, brown sugar and salt for the topping.

Pour in melted butter and rub with your fingers until the mixture forms craggy clumps the size of peas and small pebbles.

Stir in the chopped pecans, then scatter the crumble evenly over the apples.

Bake for 40-45 minutes, until the topping is deep golden and the fruit juices bubble thickly around the edges.

Rest for at least 15 minutes so the syrup thickens and clings to the fruit.
Chef's tip
Use two apple varieties : one that holds its shape (Granny Smith) and one that softens into sauce (Honeycrisp) : for a filling with both texture and jammy body.
Suggested pairing
Crown each warm portion with a scoop of vanilla ice cream or a swirl of lightly whipped cream and a drizzle of maple syrup.
