Slow Cooker Thai Peanut Chicken
Tender chicken bathed in a creamy, tangy peanut-coconut sauce with a hint of lime and chili : irresistibly moreish.
Ingredients
- 2 lb boneless chicken thighs
- 1,5 cup coconut milk
- 0,5 cup peanut butter
- 3 tbsp soy sauce
- 2 tbsp lime juice
- 2 tbsp red curry paste
- 1 tbsp fresh ginger, grated
- 0,25 cup roasted peanuts, chopped
- 3 tbsp fresh cilantro, chopped
Instructions

Whisk together the coconut milk, peanut butter, soy sauce, lime juice and red curry paste until smooth.

Place the chicken thighs in the slow cooker and pour the sauce over.

Add the grated ginger and stir to coat.

Cook on LOW for 6 hours until the chicken is tender and the sauce is fragrant.

Stir the sauce, breaking the chicken into large pieces as it loosens.

Garnish with chopped peanuts and fresh cilantro, and serve over rice.
Chef's tip
Brighten the finished dish with an extra squeeze of fresh lime just before serving to lift the rich peanut sauce.
Suggested pairing
Serve with jasmine rice and a cold, floral Gewürztraminer.
