Slow Cooker Red Lentil Dahl

A comforting vegetarian dahl of red lentils gently spiced with turmeric, cumin and ginger, silky and nourishing.

Ingredients

  • 2 cup red lentils
  • 1 cup yellow onion, diced
  • 3 tbsp garlic cloves, minced
  • 1 tsp ground turmeric
  • 1 tbsp ground cumin
  • 1 tbsp fresh ginger, grated
  • 1,5 cup diced tomatoes
  • 3 cup vegetable broth
  • 1 cup coconut milk
  • 3 tbsp fresh cilantro, chopped

Instructions

    Rinse the red lentils and add them to the slow cooker with the diced onion and garlic.

    Stir in the turmeric, cumin, grated ginger and diced tomatoes.

    Pour in the vegetable broth and coconut milk, mixing well.

    Cook on LOW for 6 hours until the lentils are soft and creamy.

    Whisk vigorously to break down the lentils into a smooth dahl and adjust seasoning.

    Finish with fresh cilantro and a squeeze of lemon before serving.

Chef's tip

Bloom the spices in a little hot oil before adding, or temper them at the end, to unlock a far more aromatic dahl.
