Silky, spiced tomato and cream sauce enveloping tender chicken : a fragrant Indian classic made effortless.
Ingredients
- 2 lb boneless chicken thighs
- 2 tbsp garam masala
- 1 tbsp fresh ginger, grated
- 3 tbsp garlic cloves, minced
- 2 cup tomato passata
- 2 tbsp tomato paste
- 0,75 cup heavy cream
- 3 tbsp butter
- 3 tbsp fresh cilantro, chopped
Instructions
- 1
Combine the chicken thighs, garam masala, ginger, garlic and half the tomato passata in the slow cooker.
- 2
Add the tomato paste and stir to coat the chicken evenly.
- 3
Cook on LOW for 6 hours until the chicken is tender.
- 4
Shred or cube the chicken slightly, then stir in the heavy cream and butter until glossy.
- 5
Cook on HIGH for a final 15 minutes to warm through and thicken.
- 6
Finish with fresh cilantro and serve with rice.
Chef's tip
Add the cream only at the end and never let it boil hard : this keeps the sauce velvety and prevents it from splitting.
Suggested pairing
Pairs wonderfully with warm naan and a chilled Riesling.
