Slow Cooker Beef Stew with Root Vegetables
Hearty chunks of beef and earthy root vegetables simmered in a rich, savory gravy for pure cold-weather comfort.
Ingredients
- 2 lb beef chuck, cubed
- 3 tbsp all-purpose flour
- 3 cup carrots, chunked
- 2 cup parsnips, chunked
- 3 cup potatoes, chunked
- 1 cup yellow onion, diced
- 2 tbsp tomato paste
- 3 cup beef broth
- 2 g bay leaves
- 1 tsp dried thyme
Instructions

Toss 2 lb cubed beef chuck with the flour until evenly coated.

Sear the beef in a hot skillet with a little oil until browned on all sides, then transfer to the slow cooker.

Add the carrots, parsnips, potatoes and onion around the meat.

Stir the tomato paste into the beef broth and pour over, then add the bay leaves and thyme.

Cook on LOW for 8 hours until the beef is fork-tender and the vegetables are soft.

Discard the bay leaves, adjust seasoning and stir before serving.

Don't skip searing the beef — the browned crust dissolves into the gravy and gives the stew its deep, roasted backbone.
