Sheet-Pan Miso-Glazed Salmon with Charred Broccoli

Buttery salmon lacquered in a sweet-savoury miso glaze roasts alongside blistered broccoli for a 25-minute one-pan dinner bursting with umami.

Ingredients

  • 4 piece salmon fillets, skin-on
  • 3 tbsp white miso paste
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp fresh ginger, grated
  • 1 tsp toasted sesame oil
  • 6 cup broccoli florets
  • 2 tbsp extra-virgin olive oil
  • 3 piece green onions, sliced
  • 1 tbsp toasted sesame seeds

Instructions

    Preheat the oven to 425°F (220°C) and line a rimmed sheet pan with parchment.

    In a small bowl, whisk together the white miso, honey, soy sauce, rice vinegar, grated ginger and toasted sesame oil until smooth and glossy.

    Toss the broccoli florets with extra-virgin olive oil, salt and pepper, then spread on one side of the sheet pan.

    Pat the salmon fillets dry, season with salt, and nestle them onto the other side of the pan.

    Brush the salmon generously with the miso glaze, reserving 1 tbsp for finishing.

    Roast for 10-12 minutes, until the broccoli edges char and the salmon flakes easily with a fork at 125°F (52°C) internal.

    Switch the oven to broil for 1-2 minutes to caramelize the glaze until deeply amber and bubbling.

    Brush the reserved glaze over the hot salmon, then shower with sliced green onions and toasted sesame seeds before serving.

Chef's tip

Pull the salmon at 125°F (52°C) internal — carry-over cooking will bring it to a perfectly silky medium as it rests, avoiding the dreaded white albumin bleed.

Suggested pairing

Serve over steamed jasmine rice with a chilled off-dry Riesling to balance the glaze's sweetness.
