Sheet-Pan Miso-Glazed Salmon with Charred Broccoli

Buttery salmon lacquered with sweet-savoury white miso, roasted alongside blistered broccoli for a 25-minute umami bomb inspired by Japanese izakaya flavours.

Ingredients

  • 4 pieces (150g each) salmon fillets, skin-on
  • 3 tbsp white miso paste
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 2 tbsp toasted sesame oil
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 6 cups (500g) broccoli florets
  • 3 stalks green onions, sliced
  • 1 tbsp toasted sesame seeds
  • 1 unit lime

Instructions

    Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment.

    In a small bowl, whisk together the white miso, honey, rice vinegar, grated ginger, and 1 tbsp sesame oil until glossy and emulsified.

    Toss the broccoli florets with the remaining sesame oil, a pinch of salt, and the minced garlic; spread on one side of the sheet pan.

    Pat the salmon fillets dry, place them skin-side down on the other side, and brush generously with two-thirds of the miso glaze.

    Roast for 10-12 minutes, until the broccoli edges char and the salmon flakes at a gentle press (internal temp 125°F / 52°C for medium).

    Switch the oven to broil for 1-2 minutes, watching closely until the glaze bubbles and caramelizes into a lacquered crust.

    Drizzle the reserved glaze over the salmon, shower with sliced green onions and toasted sesame seeds, and finish with a squeeze of lime.

Chef's tip

Reserve a third of the glaze before it touches the raw salmon — brushing it on after roasting layers bright, uncooked miso flavour over the caramelized crust for depth without cross-contamination.

Suggested pairing

Serve over steamed short-grain rice with a chilled glass of off-dry Riesling or cold barley tea.
