Sheet-Pan Miso-Glazed Salmon with Charred Broccoli
Buttery salmon lacquered in sweet-savoury miso glaze, roasted alongside crispy broccoli florets with toasted sesame. A 20-minute weeknight showstopper.
Ingredients
- 4 pieces (150g each) skin-on salmon fillets
- 3 tbsp white miso paste
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 1 tsp toasted sesame oil
- 6 cups (500g) broccoli florets
- 1 tbsp extra-virgin olive oil
- 3 stalks green onions, sliced
- 1 tbsp toasted sesame seeds
- 1 whole lime
Instructions

Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment.

In a small bowl, whisk together the white miso, honey, soy sauce, rice vinegar, grated ginger, and sesame oil until smooth and glossy.

Toss the broccoli florets with 1 tbsp extra-virgin olive oil, salt, and pepper, then spread on one side of the sheet pan.

Pat the salmon fillets dry, place them skin-side down on the other side of the pan, and brush generously with two-thirds of the miso glaze.

Roast for 10-12 minutes, until the salmon flakes easily with a fork and the broccoli edges turn deeply charred and crispy.

Switch the oven to broil for 1-2 minutes to caramelize the glaze until it bubbles and darkens without burning.

Drizzle the remaining glaze over the salmon, then scatter with sliced green onions and toasted sesame seeds.

Serve immediately over steamed rice with a squeeze of lime.
Chef's tip
Blot the salmon dry with paper towel before glazing — moisture prevents the miso from clinging and caramelizing into that signature lacquered crust.

Pair with a crisp off-dry Riesling or chilled jasmine green tea to balance the sweet-savoury glaze.
