Sheet-Pan Miso-Glazed Salmon with Charred Broccoli
Buttery salmon lacquered in sweet-savoury miso caramelizes under the broiler while broccoli crisps at the edges : a full dinner from one pan in 20 minutes.
Ingredients
- 4 piece salmon fillets, skin-on
- 6 cup broccoli florets
- 3 tbsp white miso paste
- 2 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 2 tbsp extra-virgin olive oil
- 1 clove garlic, grated
- 1 tbsp fresh ginger, grated
- 3 piece green onions, sliced
- 1 tbsp toasted sesame seeds
- 1 piece lime

Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment.

In a small bowl, whisk 3 tbsp white miso, 2 tbsp maple syrup, 1 tbsp rice vinegar, 1 tbsp toasted sesame oil, and 1 grated garlic clove until smooth and glossy.

Toss the broccoli florets with 2 tbsp extra-virgin olive oil, a pinch of salt, and half of the grated ginger; spread on one side of the pan.

Roast the broccoli alone for 8 minutes, until the edges start to char and blister.

Pat the salmon fillets very dry, nestle them onto the empty side of the pan, and brush generously with the miso glaze, reserving 1 tbsp.

Return to the oven for 8-10 minutes, until the salmon flakes gently and reads 125°F (52°C) at the thickest point.

Switch to broil for 60-90 seconds to caramelize the glaze : watch closely to avoid burning.

Drizzle with the reserved glaze, scatter with sliced green onions and toasted sesame seeds, and finish with a squeeze of lime.
Chef's tip
Pull the salmon at 125°F (52°C) : it will carry over to a perfect medium as it rests, staying silky rather than drying into flakes.
Suggested pairing
Serve over steamed jasmine rice with a chilled glass of off-dry Riesling or cold barley tea.
