Sheet-Pan Honey-Garlic Salmon with Broccoli and Sesame

Glossy, caramelized salmon fillets and blistered broccoli florets share a single pan, coated in a sticky honey-soy glaze finished with toasted sesame.

Ingredients

  • 600 g salmon fillets, skin-on
  • 4 cup broccoli florets
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 3 unit garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp toasted sesame oil
  • 1 tbsp toasted sesame seeds
  • 2 tbsp green onions, sliced

Instructions

    Preheat the oven to 425°F (220°C) and line a large sheet pan with parchment.

    In a small bowl, whisk together 3 tbsp soy sauce, 2 tbsp honey, 1 tbsp rice vinegar, 3 minced garlic cloves and 1 tsp grated ginger until emulsified.

    Toss 4 cups broccoli florets with 1 tbsp sesame oil and a pinch of salt, then spread on the sheet pan and roast for 8 minutes, until edges begin to char.

    Push the broccoli to the edges and nestle 4 salmon fillets (about 150 g each) skin-side down in the centre.

    Brush the salmon generously with two-thirds of the glaze, reserving the rest.

    Return to the oven and roast for 9-11 minutes, until the salmon flakes gently with a fork and reads 125°F (52°C) at the thickest point.

    Switch the oven to broil for the final 1-2 minutes to caramelize the glaze, watching closely so it does not burn.

    Drizzle with the reserved glaze, scatter 1 tbsp toasted sesame seeds and 2 tbsp sliced green onions, and serve immediately.

Chef's tip

Pull the salmon from the fridge 15 minutes before roasting — room-temperature fish cooks more evenly and stays silky in the centre instead of drying out at the edges.

Suggested pairing

Serve over steamed jasmine rice with a chilled glass of off-dry Riesling to balance the sweet-savoury glaze.
