One-Pot Smoked Sausage and Rice
Smoky sausage, bell peppers and fluffy rice come together in a single skillet for a hearty, fuss-free dinner.
Ingredients
- 1 lb smoked sausage
- 1,5 cups long-grain white rice
- 3 cups chicken broth
- 1 cups red bell pepper
- 1 cups yellow onion
- 2 tbsp garlic
- 1 tsp smoked paprika
- 2 tbsp olive oil
- 3 tbsp green onion
Instructions

Brown 1 lb sliced smoked sausage in olive oil over medium-high until edges crisp, 4 minutes.

Add onion and bell pepper; cook until softened, 3 minutes.

Stir in garlic, smoked paprika and rice, toasting the grains for 1 minute.

Pour in chicken broth and bring to a boil, scraping the bottom.

Cover, reduce heat and simmer 18 minutes until rice is tender and liquid absorbed.

Rest 5 minutes off heat, then fluff and scatter with green onion.

Resist lifting the lid while the rice simmers — trapped steam cooks the grains evenly and keeps them fluffy, not gummy.
