Miso-Ginger Glazed Grilled Salmon Skewers

Cubes of salmon lacquered with a savoury white miso glaze, threaded onto skewers and grilled until caramelized outside and silky within.

Ingredients

  • 1,5 lb skinless salmon fillet
  • 3 tbsp white miso paste
  • 2 tbsp soy sauce
  • 3 tbsp mirin
  • 2 tbsp honey
  • 1 tbsp fresh ginger, grated
  • 1 clove garlic clove, minced
  • 1 tbsp toasted sesame oil
  • 6 stalks green onions
  • 1 tbsp toasted sesame seeds

Instructions

    Soak wooden skewers in cold water for 30 minutes to prevent burning, or use metal skewers.

    In a small saucepan, whisk together white miso, soy sauce, mirin, honey, grated ginger, minced garlic, and toasted sesame oil.

    Simmer the glaze over medium-low heat for 3-4 minutes, whisking constantly, until slightly thickened and glossy; reserve 3 tbsp for serving.

    Cut the salmon into 1.5-inch (4 cm) cubes and pat dry; toss gently with 2 tbsp of the glaze and marinate for 15 minutes.

    Thread the salmon cubes onto skewers, alternating with 1-inch pieces of green onion, leaving a small gap between pieces for even charring.

    Preheat the grill to medium-high, around 425°F (220°C), and oil the grates well with a paper towel dipped in neutral oil.

    Grill the skewers for 2-3 minutes per side, brushing with more glaze after each turn, until the salmon flakes gently and the edges are deeply caramelized.

    Transfer to a platter, drizzle with the reserved glaze, and sprinkle with toasted sesame seeds and thinly sliced green onion tops.

Chef's tip

Oil the grates right before laying down the skewers, and don't move the salmon for the first 2 minutes — this lets a crust form so the fish releases cleanly instead of sticking and shredding.

Suggested pairing

Serve over steamed jasmine rice with a cucumber-sesame salad and a chilled dry Riesling or crisp lager.
