Chicken Teriyaki Stir-Fry
Glossy homemade teriyaki coats seared chicken and colorful veg in this bright, quick-fire skillet dinner.
Ingredients
- 1 lb boneless chicken thighs
- 1,5 cups red bell pepper
- 1 cups carrots
- 0,33 cups soy sauce
- 2 tbsp mirin
- 2 tbsp honey
- 1 tbsp cornstarch
- 1 tbsp garlic
- 1 tbsp fresh ginger
- 2 tbsp vegetable oil
- 3 tbsp green onion
Instructions

Whisk soy sauce, mirin, honey and cornstarch with 3 tbsp water for the teriyaki sauce.

Sear 1 lb bite-sized chicken thighs in vegetable oil over high heat until golden, 5 minutes.

Add bell pepper and snap-thin carrots; stir-fry 3 minutes until crisp-tender.

Stir in garlic and ginger for 30 seconds until fragrant.

Pour in the sauce and toss until it thickens and glazes everything, about 2 minutes.

Garnish with green onion and sesame seeds.
Chef's tip
Use chicken thighs over breast — their higher fat keeps the meat juicy under the high heat and lets the teriyaki cling better.
